It's been a few days since I've posted and I just realized how close we are to the end of this amazingly fun time! 30 days to discover the wonderful aromas and flavors of Melitta Costa Rican and Guatemalan.  I've truly enjoyed every moment of it. Although Me Time has been a little scarse around here since my wife's accident I have reallly learned to appreciate it even more. I've grown and learned so much. Hello everyone!

I hope you all had a relaxing Sunday! Wow I cannot beleive that this is the last Sunday before the challenge ends. It seemed like yesterday when I got a package from Melitta to do the challenge! So I couldn't go to bed without popping in for a bit to say hi!

My Mom and I made Tiramisu tonight with the Costa Rican Coffee! It was delicious!

Here's the recipe for those who are interested:

6 lady fingers

2 egg yolks

1/2 cup powdered sugar

4 oz. Mascarpone cheese

1/3 cup whipping cream, whipped

1/4 cup strong coffee

1/4 cup Kahlua

1 oz. chocolate, grated

2 tsp unsweetened cocoa powder

Place lady fingers on baking sheet and toast 10 minutes at 325 F. Whisk yolk with powdered sugar. whisk in mascarpone cheese. Fold in whipped cream.

Seperately, mix coffee and Kahlua.

Seperately, mix chocolate and cocoa.

The weather was beautiful again this weekend and my family and I enjoyed every moment! 

Although it may seem early to some, my children decided it was time to start decorating outside for Christmas!!  Maybe it is the bright red Christmasy Melitta mug that I can’t seem to part with, but I had no objections to starting to put up our lights... Another weekend gone. There wasn't much time for "me time' this weekend, but there is always time for a cup of Melitta Guatemalan- even if I have to take it on the run! I took my boys to floor hockey on Friday evening, bowling Saturday, and then a wedding reception on Saturday night. With homework and a bit of housework today, the weekend has flown by! Has been a fun-filled family time! i will admit that I am happy to put my feet up and enjoy a little quiet time. Just me and my cup of Melitta.
